Cinnamon French Toast

I made this delicious french toast for lunch today. It was amazing so I thought I would share.

Cinnamon French Toast

What you will need:

1 loaf of bread (I use whole wheat)
Large frying pan and spatula
Whisk
Vegetable oil for frying

Batter:

2 large eggs
2 tablespoons sugar
½ teaspoon salt
½ teaspoon vanilla extract (I use bourbon vanilla)
2 cups of milk (I use vanilla almond milk)
1 cup of flour
2 ½ teaspoons baking powder

Coating:

4 teaspoons cinnamon
½ cup sugar

Directions:

1.) Whisk together all of the batter ingredients in a large bowl.
2.) Blend coating ingredients in a small bowl
3.) Heat a generous amount of vegetable oil in a large frying pan on medium or medium high heat.
4.) Coat each slice of bread in the batter mixture and place in your hot frying pan
5.) Cook till golden brown on each side checking frequently to avoid burning
6.) When golden remove and place onto a paper towel to drain excess oil
7.) Sprinkle with cinnamon sugar coating, let sit for a few minutes, shake off extra coating back into bowl
and repeat on the second side.
8.) Repeat until you run out of batter/bread.

Syrup is optional as the cinnamon sugar coating plus a pad of butter makes a delicious sauce!

What is Team Eeat? For those of you that do not know, it is a group of Edible Artist that have brought their talents to the Internet. Getting To Know Team EEAT!

This Week We Are Visiting With Edibles Artist is Angelica from athyme2bcomforted.

Angelica's shop is so different from the rest of the teams; featuring homemade Enchiladas, hummus, salsa's, and Bruschetta! She has told us that her most popular items right now are her enchiladas(see picture below) and tamales (pork tamales pictures above).

She also offers wonderful desert items like her newest item Sopapillas pictured below! If you have never had one, you really do not know what your are missing! "These little deep fried doughy morsels will have your mouth watering. They can be covered in powdered sugar, cinnamon and sugar or honey."

We asked Angelica some questions, and here are her replies!

If you have 24 hrs to yourself what's on the agenda?

I would check into the Camelback Inn here in town, get a massage, then venture out to the pool to soak up some rays where litte umbrella drinks are delivered to me, oh and then snuggle up in that BIG fluffy hotel bed with some room service and watch a movie!!

If you could move anywhere where would it be and why? Whats your favorite thing to make? How did you learn how to make it?

If I could move any where it would be some where tropical, with white sandy beaches, and gentel rolling waves. I love the ocean, it brings me peace!! My favorite thing to make would be my enchilada's, the receipie was from my grandma. When I make them I feel closer to her now that she is gone. It also reminds me of helping my mom in the kitchen, it was one of my dad's fave meals!! So we had them at least once a week, and that is how I learned how to make them.

Tell Congress:
One Size Does Not Fit All When Considering Food Safety Bills!

Small local farms and food processors are fundamentally different from huge, industrial food suppliers that ship food all over the country. Congress can and SHOULD address the problems with the industrial food supply. However they should do so without harming the local food systems that provide an alternative for concerned consumers!

The U.S. Senate is considering a bill, S. 510, to reform the food safety system. Although reform of the industrial food supply is clearly needed, this bill threatens to create more problems than it will solve. S. 510 would undermine the rapidly growing local foods movement by imposing unnecessary, burdensome regulations on small farms and food processors – everyone from your local CSA to the small bakers, jam makers, and people making fermented vegetables to sell at the local farmers market.

FDA Regulation of Local Food Processors Is
Unnecessary and Burdensome

Federal regulations may be needed for industrial processing that source raw ingredients from multiple locations (sometimes imported from other countries) and ship their products across the country. But federal regulation is overkill for small local processors. State and local public health laws are enough for local food sources.

HACCP Will Not Improve Food Safety and Will Harm Small Processors

S. 510 applies a complex and burdensome Hazard Analysis and Critical Control Point (HACCP) system to even the smallest local food processors. The HACCP system, with its requirements to develop and maintain extensive records, has proven to be an overwhelming burden for a significant number of small regional meat processors across the country. In the meat industry, HACCP has not eliminated the spread of E-coli and other pathogens and has resulted in fewer independent inspections of the large slaughter plants where these pathogens originate. At the same time, small regional processors have been subject to sanctions due to paperwork violations that posed no health threat. Applying a HACCP system to small, local foods processors could drive them out of business, reducing consumers’ options to buy fresh, local foods.

*Note from Team EEAT: Reputable food sellers ALREADY have HACCP in place for their establishments as per their Food Mangers Certification. The HACCP that this bill is talking about will simply add FEES to a system that is already in place. Thus making it financially impossible for Small Business to operate.

S. 510 Puts FDA On The Farm

S. 510 calls for FDA regulation of how farms grow and harvest produce. Given the agency’s track record, it is likely that the regulations will discriminate against small, organic, and diversified farms. The House version of the bill directs FDA to consider the impact of its rule making on small-scale and diversified farms, but there are no enforceable limits or protections for small diversified and organic farms from inappropriate and burdensome federal rules.

What The House Has Done

On July 30, the U.S. House passed its version of a food safety bill, H.R. 279:

The Good: The House added a definition for "retail food establishments" that allows for some cottage level processing without invoking FDA regulation. Over 50% of the product must be sold at retail to qualify. The amendments also inserted some exemptions in the registration and record-keeping sections fo the bill for farmers selling direct to consumers.
The Bad: HR 2749 continues to direct FDE to set standards for how farmers grow and harvest some types of produce, such as leafy greens, even for small farmers selling directly to consumers.
The Ugly: HR 2749 puts local facilities processing local foods for local markets under the same regulatory regime, and paying the same fees, as the major industrialized agribusiness, like Dole or Del Monte.

The focus is now on the Senate. The major food borne illness outbreaks and recalls have all been within the large, industrial food system. Small, local food producers have not contributed to the highly publicized outbreaks. Yet both the House and Senate bills subject the small, local food system to broad federal regulatory oversight. Increased regulations, record-keeping obligations, and the penalties and fees could destroy small businesses bringing food to local communities. Take action today to protect local food producers, promote food safety, and help your local economy!

Cake Balls

-1 boxed cake prepared(I used red velvet duncan hines prepare per box)
-1 container of premade frosting(I used duncan hines cream cheese frosting)
-Chocolate bark-I used half white chocolate bark and half real white chocolate as I found this gave the coating the perfect taste. I found 100% chocolate bark to be waxy.
-baking sheet lined with wax paper

-Allow prepared box cake to cool completely(I did this the night before)
-Crumble cooled cake into a very large bowl
-Mix thoroughly with premade frosting of your choice
-Form mixture into walnut sized balls and place on cookie sheet
-Freeze balls for several hours
-Melt your chocolate bark/chocolate in the microwave according to package
-Dip balls into chocolate, remove quickly, tap off excess and place on wax paper.
-Allow to harden and store in fridge(if they even last that long!)

Happy National Pie Day!

According to the American Pie Council(A.P.C.). Yes, there really IS a "council" on pie! Anyway, according to the A.P.C., January 23rd is National Pie Day.

National "Pie" Day? What is that? Well apparently it has quite a bit of people busy! There are National Pie Day sales. Carrows Restaurant and Coco's Bakery in California devotes a whole week to National Pie Day. Ind Dubois, ID stop by the Clark County District Library and feed your mind and your tummy. They are handing out slices of pie as well as information about this delicious slice of history. If you are in Rockland, Maine don't forget the "Pies on Parade". No this is not an actual Pie Parade, it is actually a tour of historic Inns with delicious pie to warm you up at each stop. Why even down here in Texas you can attend a "Pie Social" in you are in the Austin area.

I am sure you are all familiar with the term "As American As Apple Pie," but is pie actually an American invention? The answer is no.

Pie actually originated with the Ancient Egyptians. Of course back then the outside was merely a vessel in which to cook and hold the filling. Not actually to be eaten. Of course the Greeks liked the idea and took home to their country, and then the Romans too decided it was a great idea.

It wasn't until around the 12th century that Pyes (or pies as we know them) becan to have an edible crust. This crust was referred to as a "coffyn" and were more on the savory side. What filling there was in them was generally meat or poultry. English history actually credits Queen Elizabeth I with the first "fruit" pie. It was cherry.

We can credit "American Pie" to the early English settlers. They brought their pies to America. Over the years it has evolved into the delicious treat that we know today.

So break out your mixer and your pie pans. Pre-heat your ovens and enjoy a slice of history today on National Pie Day!

Standing Rib Roast for that Special Christmas Dinner!!

Good Morning to all of you Foodie's!!

Being a foodie I love all things food, so I am always doing research (actually it's me time) on different tips, gadgets etc to use in the kitchen. While I have a knack for throwing together some scrumptious dishes, somethings still allude me or I have the "Angelica" way of doing things, which is not necessarily the right way (wait did I say that, my way is always the right way......hehehe).

So we are going to find the right way to do things together!! If you have a dish that you just can't get right and can't figure out why or you are thinking to yourself there has to be some kind of gadget to make a process easier, email me!! I will do the research and then your question and of course the answer will be featured on the blog!! Until I start getting those questions I will delve into the culinary arts on my own!!

So this brings us to today's Tip, the all intimidating Standing Rib Roast!!! For those of you that do not know what a standing rib roast is, it's that sheek hunk of meat that you see on all those Holiday food commercials, you know the hunk of meet that looks like a crown!!! Yes your family will ooooooooooh and ahhhh if you prepare one of these!!! Well did you know that you can actually stuff one of these puppy's to really impress your family?? Yes I said stuff it, like a turkey!!!

This technique comes to us from one of my fav magazines, Bon Appetit!! Ok here are the steps to stuff your own standing rib roast!

1. Position roast on work surface with bones up right. With a long, sharp knife, start at the top and work down, cutting a five - to- six inch crevice between the bones and meat. Be sure to keep the bones attached. Basically what you are doing is cutting behind the bones to create a pocket for the stuffing, when you are creating the pocket make sure that you don't cut it all the way down, I would say leave a good 2 inches at the bottom!

2. Gently pry the bones away from the meat, creating a space. Fill the crevice with the stuffing, making sure to pack firmly. Basically you are going to take the side with the bones in one hand and with your other hand you are going to pull the meat away from the bones, be careful not to pull to hard, you don't want to have a rip in your pocket!! If you are having trouble pulling the meat away, take your free hand and make a fist and fit it into the pocket to help stretch the meat.

3. Once you have inserted all the stuffing press the bones in to compact the stuffing. Tie the bones back in place with three to four loops of kitchen string. Bring the string completely around the roast to secure it and to keep the stuffing in place. You can buy butchers twine at Fry's or any of your large grocery stores. Basically you are just trussing this puppy together, cut 3 to 4 strands of the butchers twine that are long enough to go around the roast (vertically) and long enough to let you give it a good tight knot. This also depends on how big the roast is, if your roast is larger you may need more twine!!

Well there you go, now you can stuff your own Standing Rib Roast!! Now I know what your thinking I don't have a recipe to make one of these, well Angelica is here to please!! You need to visit one of my favorite web sites, Food Network!! There is a video that Tyler Florence has and also the recipe for the roast! His version is not stuffed, but you can apply the technique above and stuff it!!

Where's the Gravy?!

It's that time of year again. Time to spend hours at the grocery store in search of the perfect ingredients for "the meal". You know which one I am talking about. "The meal" that you slave over for hours only to have the family descend upon it and gobble it up in mere minutes!

For some people cooking a turkey strikes terror deep in to their souls. Maybe this is why Butterball is flooded every year with millions of phone calls all the way up to the actual "turkey day" with questions surrounding this dreaded bird.

"How do I defrost a turkey?"

"How long do I cook the turkey?"

"Is the turkey safe to eat after the cat decided to help itself to a turkey meal?" (OK maybe Butterball can't help with that last one..... but then again who knows!)

It seems like only yesterday I was one of these folks suffering from Turkey Phobia. With the help of dear friend Tammy and good sense of humor I made it through and so can you!

I had been living in Dallas for about three months. Money was tight and my work schedule was even tighter. There was just no way I was going to make it home for Christmas. I had a dear friend Tammy from my home town that lived about an hour away with her two kids. She and her kids were not able to go home for Christmas either so we decided to spend it together in my little Dallas apartment.

Days before I was busy preparing for the event. I absolutely LOVE Christmas. I love the decorating, the music, the food. I especially LOVE to Entertain!!! Most of you who know me are saying (with lots of sarcasm) "Big surprise there! " I had the menu planned out to the most minute detail. I purchased all of the ingredients for my feast, and baked my pies. So that Christmas morning I arose early to start preparing "the guest of honor"... Mr Tom.

I had of course thawed Mr Tom according to the wonderful instructions received from the Butterball hot line and was busily preparing him for his trip to the oven. I peeled of the plastic suit and peered into the recesses of his body cavity for the tiny packet that would contain the "giblets" for the Turkey Gravy. You see I had never cooked a turkey before but I had baked several chickens and knew that this is where they placed the packet. I thought it was strange that the turkey did not contain the tiny packet. I remember thinking to myself: "Hmmm, maybe this bird didn't come with them. Oh well who needs gravy anyway?" You see even then I wouldn't dare get gravy from a jar. So no giblets meant no gravy!

This minor setback did not bother me at all. I proceeded to give Mr. Tom his herbal rub down and threw him into the oven. No worries! Now I had time to watch a few Christmas movies and make my Christmas phone calls to family while Mr Tom sat in his herbal sauna. The house was beginning to smell wonderful... except for this slight plastic scent that I could not seem to locate.

It was time to begin preparing the rest of our feast; cornbread stuffing (or dressing as we call in here in the south), green beans, buttered carrots, and of course cranberry sauce. Everything was perfect! I set the table with my china, crystal glasses, and candles in their silver candle sticks. Even my time was impeccable. Everything was ready to go to the table as my dinner guests arrived. I still could not locate that slight plastic smell! "Oh well the smell of everything else will hide it" I thought to myself.

We sat down to enjoy the huge feast that I had prepared. Tammy (who is my dear friend because she always says exactly what is on her mind) says without a beat "Where's the gravy?" "Funny thing, this bird didn't have any giblets so I didn't make any gravy." I said.

"No giblets?! Did you look in the neck?"

Mystery of the slight plastic smell was solved! How was I to know that they put giblets in the NECK of the turkey and NOT the cavity? Boy was I embarrassed! The turkey still tasted wonderful, and we all enjoyed our Christmas together. Of course being the dear friend that she is, Tammy has NEVER let me forget that first turkey. Every year I get a phone call or an email with some joke or picture about preparing a turkey. *smiles*

I hope my treasured memory of this "first turkey" has brought brought a smile to your face and inspired you to "tackle the turkey!"

Thanksgiving Day Breakfast

Thanksgiving is fast approaching! If you are hosting this years party you are probably busy putting the finishing touches on your menu, décor and place settings. All of this on top of your normal daily routine. It can be hectic and even more so if you skip breakfast! So why not whip up tasty pancakes!! These are not just any ordinary pancakes. In honor of the season these are pumpkin spice pancakes. Last year we (hubby and I) enjoyed Thanksgiving at my sister-in-laws home. We had some extra pumpkin puree and decided to whip up some of these delicious pancakes. So this recipe has been tested! Everyone gave these two thumbs wayyy up. So don’t be stressed, hungry and grumpy on Thanksgiving by waiting till the dinner is ready to chow down. Have breakfast first!!

Pumpkin Spice Pancakes:

Ingredients:

2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger 1/2 teaspoon salt
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar

Directions:

1.) In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.

2.) Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Home Made Ricotta, its easier than you think!

Well who doesn't like cheese? I love the stuff, put it on a bumper and I would eat it bumper and all!! One of my favorite cheeses is Ricotta! Why you ask, well because it is a very versatile cheese it can be used in savory or sweet applications. I also like the texture some where between cottage cheese and cream cheese. Be it in a Lasagna or stuffed into a Ravioli I love me some Ricotta in my home made marinara........mmmmmm....

So in honor of my favorite cheese I found instructions on how to make it your self at home!! Yes I said YOU can make your own Ricotta!! Alright lets' get to the good stuff and give you the skinny on how to wow your friends with your own homemade Ricotta!!
What you will need:

8 cups of whole milk

1 tsp salt

3 tbs fresh lemon juice

Makes: 1.5 cups

Execution:

1. Line a medium colander with for layers of cheesecloth. Set the cheesecloth-lined colander in the sink. You can purchase cheesecloth at your local grocery store, I bought some at Fry's.

2. Bring the whole milk and salt to a simmer in a large, heavy-duty saucepan over medium heat.

3. Stir in the fresh lemon juice. Reduce heat to a simmer. Simmer the milk mixture gently until curds form, usually one to two minutes.

4. Using a slotted spoon or mesh skimmer, transfer the curds to the prepared colander. Let them drain for only a minute.

5. Transfer the ricotta to a medium bowl. It can be served right away, or covered and chilled for up to two days.

Really 5 steps to have my own home made ricotta? That is just awesome! Ok so now you have all this ricotta lyin around your house.....what to do ....what to do......oh I know have a dinner party and WOW your guest with your mad Ricotta making skills!!! Try this recipe out and have your friends do a double take and beg to be invited to your house for dinner again!!!

Oh this little gem is from one of my most favorite mags, Bon Appetit!!

Appetizer: Figs and Onion Bruschetta (umm helllo cheese and bread.....)

Makes: 8

Ingredients:

Figs:

.5 cup dried black Mission figs, stemmed, halved (I have seen fresh figs at Costco, dried I would think my local AJ's would have them or Whole Foods)

1 cup boiling water

3/4 C dry red wine

2 tbs sugar

1 small bay leaf

1/8 tsp coarse kosher salt (you can buy this at Frys or Penzeys)

1 tsp red wine vinegar

Onion:

1.5 tsp butter

1.5 tsp extra virgin olive oil

1 medium red onion, halved through core, cut lengthwise into .5" strips (take a whole onion, cut in half where the root knob thing is, once you have cut it in half take one half and with the root end pointing to the left start slicing slowly and care fully)

2 tbs red wine vinegar

.5 tsp sugar

pinch of coarse kosher salt

Ricotta:

1 cup fresh ricotta cheese (YES THE ONE THAT YOU MADE, this is where the double take comes in from your friends!!)

1 tbs extra-virgin olive oil plus additional for drizzling

1 tsp heavy whipping cream

pinch coarse kosher salt

8 1-inch-thick slices ciabatta bread (about 4.5x2 inches) (Cibatta is that big square bread)

1/4 c grated Parmesan cheese

2 tbs chopped fresh oregano

Execution:

Figs:

Place figs in small bowl. Pour 1c boiling water over; let soak 45 minutes
Drain figs; place in a small saucepan.
Add wine and next 3 ingredients from above; bring to a boil, stirring to dissolve sugar.
Reduce heat to medium once sugar has dissolved (you will know sugar is dissolved when you don't feel that graininess when stirring)
Simmer until figs are tender and liquid is syrupy, stirring occasionally, about 20 minutes. Add vinegar and cook 1 minute longer. Remove pan from heat and cool.

Onions:

Melt butter with oil in medium skillet over medium high heat. Add onion; saute until beginning to soften and brown stirring occasionally, about 4 minutes.
Reduce heat to low; add vinegar and sugar, then sprinkle with coarse salt and pepper.
Stir until vinegar has almost evaporated about 1 minute.

Ricotta:

Whisk ricotta, 1 tbs oil, and cream in a medium bowl until fluffy.
Season with coarse salt and pepper.
Preheat broiler
Drizzle Cibatta with some olive oil and sprinkle with coarse salt & pepper.
Broil bread on both sides until toasted (ok don't walk away from the bread in the broiler it will brown VERY quickly...this means DON'T answer the phone, answer your kids questions, let the dog out etc...because your bread will burn!!!)
Transfer to serving plate

Assembly:

Spread 2 tbs ricotta mixture on each bread slice.

Spoon glazed figs with some syrup over, top with onion mixture.

Sprinkle with Parmesan and oregano

Drizzle with oil and serve immediately (as for the oil, I would go to your local AJ's or Whole Foods and pick up some Meyer Lemon flavored olive oil, I think a little hint of citrus would help bring out the flavor in the Ricotta!!)

Hehhehe your friends are going to love you!! To keep that ricotta theme going you could always make some homemade lasagna. No time you say, well then that is when you visit my little shop, A Thyme To Bee Comforted. What do you know I have lasagna in there, yes yes I know you didn't make it....don't worry I won't tell!! Your friends won't know either just plate it and throw out the packaging evidence!!

Tell us a little about yourself!

I am a self-taught photographer, originally from Philadelphia, PA, now located in Nashville, TN by way of Chicago, IL where I lived for 10 years. (Favorite city of all time!) I'm single, with no kids (unless you count my two cats... ) and a million and one different interests. I sell fine art photography as well as do portraiture. Aside from my first love of photography, my second love is travel, which ties quite nicely to the photography as I usually end up with 400 to 500 beautiful photos to work with after each trip. In addition, I'm also a very accomplished home chef (and former caterer), an avid reader and love anything pertaining to music.

What inspires you when you are making your products?

I know, as an artist, I'm probably supposed to come up with an artist statement ripe with eloquent words, a poem if you will but, basically, I shoot what I love. If something catches my eye, I take a photo of it and, if it ultimately appeals to others, fantastic. I draw inspiration from my travels, music, books, you name it, all have shaped my view of the world and what I ultimately frame out for a photo.

What is your favorite product that you have made so far and why?

My favorite photo is called, "The Guardian." It's of a wooden chair sitting outside an abandoned warehouse in Venice, Italy. I love the photo for a number of reasons. First, I took my mother to Italy, somewhere she had always wanted to go. So it was a wonderful experience to see her eyes light up at every amazing site we came across. This photo brings me back to that week we spent travelling from Rome, through Florence and on up in to Venice. The second reason I love this one is because the minute I saw the chair sitting in front of the warehouse, a story popped to mind of the owner of the warehouse, a Venetian glass blower, taking a break to sit in the chair and watch the passersby, walking along the canals. It was such a vivid image and I was so pleased with how the final shot turned out.

Any tips for Etsy newbies or those who are starting their online business?

Don't get down on yourself. Setting up an Etsy shop, or any online business, doesn't guarantee that you are going to immediately be flooded with sales. It takes a lot of hard work, perseverance and patience. It will happen but wasting time with negativity will only serve to demotivate you. Someone once told me, "if you love what you do, it will never feel like a job." You got in to your craft, whatever it might be, for a reason, and, hopefully the primary reason was because you loved it; never let go of that. Oh and gerat customer service is key ;)

Tell us a little about your self:

It's been a lifelong pleasure for me to make beautiful and useful things for myself and for others with my own two hands. I'm married, the mother of two college students and live in Naples, Florida. Although my primary profession was clinical psychology for many years, I have never lost interest in handcrafts and living a creative life. I have interests in many arts and crafts and love them all. I've written 3 books about an image editor called PhotoImpact and maintain a tutorials site on the program. My husband and I have a small publishing business called East of the Sun Publishing. I make and sell 3D characters for a program called Poser, which are sold at Daz3D. I try to blog regularly at HeartCrafts. My Sea Sprite Soaps Shop and my Etsy store are a source of great satisfaction to me. I hope you will drop by and take a look around. :)

What inspires you to make your product?
I am inspired by living close to the sea, with pristine beaches, beautiful weather and many beautiful tropical plants and trees. Many of my soaps reflect a Caribbean sensibility that's consistent with my location. My mission is to make beautiful, fragrant, luxuriously lathering handmade soaps from only the best vegetable oils and butters.

What other things do you like to create?
I don't make many homemade doggie treats, but occasionally have made some homemade dog cookies for our two Welsh Terriers, Taffy and Libby. They love anything with peanut butter!

What advice do you have for others that want to start an online business?

My best advice for new sellers online is to know your target customers and cater to them. Don't try to be a one-size-fits-all shop, do what you do best and love to do. Your passion for what you do will draw buyers. Don't cheapen your work by offering constant sales, discounts and free shipping. It's hard to resist that lure when you're just starting out and it's hard to be noticed. Do promote yourself in the forums, answering questions and being helpful if you can -- people will remember you. Remember that lots of buyers are also sellers, and they will see your posts.

If you blog, include information about yourself and your inspirations, so that readers aren't constantly bombarded with only posts aimed at selling things to them. Readers like to know who you are as a person too.

My last piece of advice is to not spread yourself too thin. If you twitter, Facebook, MySpace, blog, and have multiple shops in every venue available, flailing around trying to be noticed, you will have less time to make desirable products. Consider how much time and energy you have to devote to your business, and spend them wisely.

Tell us a little about yourself!

Hi, I’m an Alaskan Artist. You can find my work at http://www.as2designs.1000markets.com/. I work in photography, mix media and paper crafts. During summer months I’m running around my little town on my bike or walking. You can spot me always carrying my camera so that when I spot a pretty collection of flowers I can snap away.

Since I have a complete brown thumb for growing anything; my photography focus is floral. It brings a calming effect into my creative side.

During the winter months my activities turn to activities such as cross country skiing, walking and selling my creations at various craft shows and holiday bazaars.

What inspires you when you are making your products?

When doing my photography it’s stepping into the buyers eyes and seeing art through their eyes. Otherwise I could become very wild in my creations as my guy says. I tone my work way down so that its more natural and something one would find in home who loves flowers. I took photography college courses over the years and just totally enjoy the freedom it offers me. I’ve loved photography since I was a kid with my first ‘brownie box camera’. If I could get a photo assignment with National Geographic a lifelong dream would be fulfilled!

My greatest thrill is working in my photoshop elements7 computer program and taking my photos into the wild zone that the creative side of me craves!

When I create my mix media/papers crafts I just go with things that I would like to own. The major theme of my mix media creations are Victorian, Cottage Style, and Steampunk. It’s the girly girl side of me. Otherwise I would be out in the community doing construction work. Yep I have my own construction and power tools. It’s a job that fills a notch of my orderly mind. I am available for hire ~ have references for several home remodeling jobs I handled from start to finish for customers.

What is your favorite product that you have made so far and why?

Has to be the photo that I have donated for the Team EEAT. I just love the simple look to the bud with a waterdrop coming off the petal. As a watercolor photo it just appeals to me. Several folks have also told me that they love this photo – it’s a favorite! Hence the reason for it being an item that I hope raises funds for the Etsy Edible Arts Team.

Any tips for Etsy newbies or those who are starting their online business?

Do what you love. Otherwise it becomes a chore. Selling online is very hard and demanding. Join teams, different selling venues, and remember to Promote ~ Promote ~ Promote yourself, your products, and your shops! One final word of advise "always believe in yourself" ~ Don't let others tell you "you can't do that".

Tips for newbies:

Provide excellent and creative descriptions for your products.
Treat each customer with great care and always do more than what is required.
Take your product images in natural indirect light. On a windowsill or back porch and try to use the same background for each image to provide uniformity. This will make your image stand out instead of the background.

I manage the Pets Jubilee Team on Etsy. We began selling our pet sampler boxes a year ago this month, which is very exciting. The boxes are filled with items from participating team member's shops so the customer can see the quality of the products before committing to a full size order. We're a very close knit team and support each other both on and off Etsy.

2) What inspires you in this venture?

All of the items in the box are donated by the individual artisans who make them. In return, I promote the members and their shops and organize activities (with the help of the team) to bring attention to all of us, both individually and as a whole. The money we raise goes towards promotional and supply costs and the remainder is donated to the SPCA. We are a very charitable group. Several of the individual shops contribute a portion of their proceeds to different charities, both human and animal. We hold monthly challenges where the contestants donate what they make to a chosen charity.

3) What do you love most about your roll in Pets Jubilee?

I love the people I meet! There is something warm and wonderful about a person who loves their pet. We have a monthly chat the first Saturday of every month and its just amazing! Complete strangers come together and start talking about their pets, sharing flickr photos, telling stories, and we can talk and laugh like we've known each other forever. The people who enter our pet photo contests, who buy our boxes, who attend our events are all immediately like life-long friends. We have non-team members who have been posting in our forums for over 6 months, following along with team events and our individual day to day lives. Its just wonderful.

4) Any tips for Etsy newbies or those who are starting their online business?

Get out there!
You can't post a few items to your shop and then sit back and think the sales are just going to come pouring in. You need to purchase from fellow Etsians and get some feedback. No one likes to buy from someone who doesn't support the community.
Join teams, hang out in Etsy chat and the forums. Make a blog, a Facebook account and a Twitter account. I don't understand the whole SEO Google thing, but I do know that the more links you have to your shop, the more likely Google and other search engines will find you. Link to other shops and they'll link to you. Have a link to your shop in all of your emails and have business cards with you at all times.
Participate in blog giveaways (but don't give away your product to the blogger for them to review).
Use all 14 tags.
Make the title of your product searchable. If someone wants a handmade purse, and your title is something cutesy that doesn't even contain the word "purse", then chances are you'll be pretty low on the search results.
Take great pictures even if you have to get a "Photography for Dummies" book.
Presentation is so very important. When a person opens a package from you it should be like they're receiving a present, even though they purchased it themselves. Think "Wow"!
Include business cards and a bonus item.
Check out the shops of successful Etsians and see what they do.
Keep your shop fresh and updated daily.
Most importantly, tell everyone you meet about your shop. Word of mouth is the best publicity and its FREE :)

Heather is a person that is passionate, creative and very gifted when it comes to designing her cards! Yes there are many card shops on Etsy, but I have yet to find one that has her unique flair for design or for the quality that she provides!

I know about her quality first hand as I have ordered cards from her several times! Each time I have been pleasantly surprised with my orders!! Not only is it the quality of her cards, but Heather is very nice and easy person to get along with. She cares about her customers and wants to be sure that they are happy with their purchases. Q: Tell us a little bit about yourself:

Heather: I'm 36 years old,married, no kids. I started cross stitching at a early age, took up beading, then crocheting, but not till 2.5 years ago when i took up scrap booking did i really get hooked on a craft. I started out with 12x12 layouts, then took up card making 2 years ago when i ran out of pics to scrapbook. I love hockey, the Leafs and Oilers :) and i love my dog and two cats. I work full time as an embroidery machine operator, and have been doing so for 11 years now. (god!) lol~ Heather also resides in lovely Canada...brrrrrr..........

Q: What inspires you when you are creating designs for your cards?

Heather: I get a lot of inspiration just from my stamps, I can look at a stamp and then in my head know what papers, colors and embellishments to use. I am also able to picture the layouts of my ideas in my head. I'm addicted to ribbon and embossing.

Q: What is your favorite card that you have made so far and why?

Heather: My favorite card I have made so far is the Love Bird card. I had the stamp set for a while and when I finally got around to using it, it just came out way better then I expected. I love the heart with the flourishes the best, I plan to do some nice valentines cards with that stamp.

Q: Any tips for Etsy newbies or those who are starting their online business?

Heather: The tips I would give to anyone starting out, is to just have fun! Don't' expect too much to quickly, I think most expect to sell a lot and sell right away, it doesn't always happen, and disappointment can come quickly. I joined not expecting anything but to list my cards. If someone likes and buys them that is great!!

Q: What are a couple of your favorite Etsy shops and why??

Some of my favorite shops are http://www.lucatedde.etsy.com/ he made me the best dog portrait ever and was my first big purchase on Etsy. I was his first sale and it was just a nice experience.

I also love http://www.bluesaphire.etsy.com/; I have never bought from her but I think she has the best sock monkeys around! I just love looking at them to cheer me up, she was my first international sale and even with high shipping she has come back again and again, that makes me feel good :)

I also love http://www.buttfreckle.com/ if I ever have a bad day i just go to her shop and I'm instantly cheered up lol !!

Oh yeah and http://www.txbutterfly74.etsy.com/ as well she has been my best Etsy friends almost since joining and i talk to her nightly she is a paper crafter as well, and we have lots in common!!

So you can see that Heather is an easy going and fun person which is really reflected in her work! What she is to modest to tell you, when you look at the pictures of her cards you would assume that she printed off the images that she uses, which is what I thought when I first saw her cards. In actuality she hands stamps each card and then the color that you see is hand painted with water color pencils!! She does custom orders for any occasion, and not just limited to cards. She also has these adorable gift card holders that would be PERFECT for the Holidays that are just around the corner!! So do yourself a favor and send the ones that you love a card from Heathers Handmade Creations to bright up their day!!

As I mentioned above I have ordered from TX before and example is the pendant above, I ordered it for my sister! A cute black cat!! Tell us a little about yourself: My name is Cherilyn and I will be 35 years old in February. I moved to beautiful Austin, Texas in August of 2000 from South Florida with my long term boyfriend, Alexis . We have three beautiful dogs. Alexis and I love to collect vintage musical instruments. Haha what TX forgets to mention is that she paints and she does it well. You can see some of her work on her Flicker account!

Your store has a wide range of items from chic pendants to adorable tags, what inspires you to create all these adorable items? My Inspiration comes from a lot of sources like nature, music, colors, life or other creative people. I absolutely love to brainstorm with someone to help both of our inspirations shine. It's a beautiful thing!

What are some of your favorite shops on the net? Oh my goodness! Everyone is so talented on Etsy! I am so addicted to these shops, checking on the multiple times a day to see what they are doing!

Team EEAT will be hosting a Silent Auction in November to help to raise funds for its members continued culinary education. Running a business that deals with food is a costly endeavor, especially when trying to keep up with culinary education!

We as a Team has designated November funding raising month, a portion of our sales will go to the Team Eeat Scholarship program. This program is designed to help those struggling with all of the fees of their culinary educations!

Seeing Red instead of Brown

Lentils, a small but nutritionally mighty member of the legume family, are a very good source of cholesterol-lowering fiber. Not only do lentils help lower cholesterol, they are of special benefit in managing blood-sugar disorders since their high fiber content prevents blood sugar levels from rising rapidly after a meal. But this is far from all lentils have to offer. Lentils also provide good to excellent amounts of six important minerals, two B-vitamins, and protein-all with virtually no fat.

The calorie cost of all this nutrition? Just 230 calories for a whole cup of cooked lentils. This tiny nutritional giant fills you up--not out.

Try Red Lentils in any of your recipes! Red Lentils are more colorful than the brown and green varieties hence it is all that I use for cooking.

Any chef will tell you: the more colorful the food ~ the more it appeals to all your senses; especially our sense of sight. Brown foods mean they are dull and boring; many times brown foods are also associated with health food fanatics. Too often many of us believe we are eating healthy when we are not. Examples would be having brown rice it’s the best for you but most restaurants serve white rice which most of the nutrients are bleach out. Many people associate white is clean and fresh, plus it showcases other colors well. Next time you shop pick up a small bag of brown rice and mix it up with your large bag of white rice to get you a bit closer to being healthy. Take small steps for insuring a longer life for you and those you love.

For fun plus tomorrows healthy meal ~ try my own recipe and favorite:

Mediterranean Red Lentil Soup

1 cup dry red lentils

1 large onion

1 leek

1 Chicken breast with Bone

1 cup Chicken stock

2 garlic cloves

5 cups water

1 cup cooked rice

Seasoning: ½ teaspoon of each: allspice, smoky paprika, black pepper, cumin, coriander,

SERVES 4 cooking time 1hour 15 minutes to 2hours

Chopped onion into large bit size pieces, slice leek about ¼ thick (wash and clean in cold water after slicing) dice garlic cloves.

Caramelize onions in 5qt cooking pot with ½ teaspoon grey salt, and ¼ teaspoon white pepper.

Once onions are caramelized add All the following: lentils, leeks, garlic, spices, stock, & water in large 5 qt pot. Bring to boil and cook 15 minutes, stirring occasionally.

Turn heat down to medium add chicken breast and simmer for 30 minutes. Take breast out and slice/dice off bone, discard bone and add diced/slice meat back into pot. Add rice and cook all until mixture is thicken. About another 30 minutes.

Serve with pita bread, and black olive/tomato salad with goat cheese chunks.

Cauliflower, a highly nutritious vegetable, contains many nutrients that can help prevent a range of diseases from cancer to cataracts.

Cauliflower is a member of the 'white' family in terms of fruits and vegetables. Included in this group are other natural foods such as bananas, mushrooms, onions, and garlic.

Cauliflower contains allicin, which can improve heart health and reduce the risk of strokes, and selenium, a chemical that works well with Vitamin C to strengthen the immune system. Cauliflower can also help to maintain a healthy cholesterol level. Folate is also found in cauliflower, which is a B vitamin that is needed for cell growth and replication. For this reason, it is often recommended that women who are pregnant or may become pregnant eat significant amounts of cauliflower in order to help their unborn children develop properly. Of course, cauliflower is an excellent source of fiber, which helps to improve colon health and can even help prevent cancer. And, most recently, it has been discovered that cauliflower, as well as other cruciferous vegetables, such as brussel sprouts and cabbage, contain indole-3-carbinol, a substance that can affect the metabolism of estrogen in the body, and prevent breast and other female cancers. But did you know not only can you find ‘white cauliflower but it comes in different colors? During the summer many farmers markets carry the colored varieties such as Purple and a green variety; that many times I tell my better half that it is broccoli so they will eat it – he says he doesn’t like cauliflower but sure eats a lot of this green variety!

Cauliflower steamed with a dash of salt and pepper is a joy. Many folks favorite; of course; is cauliflower with a cheese sauce. Add cauliflower to soups, casseroles, or eat it raw, and have at least ½ cup twice a week with your dinner ~ Remember it is a fun food that helps women to maintain a healthy lifestyle.

Tips N Tricks: The Incredible Edible Leek

So today's tip and trick is the Leek! A leek you say, what the hell is a leek. It's that thing at the grocery store that looks like a green onion on steroids!!!

Wikipedia defines the leek as:

Allium ampeloprasum var. porrum(L.) J.Gay

The leek, Allium ampeloprasum var. porrum (L.), also sometimes known as Allium porrum, is a vegetable which belongs, along with the onion and garlic, to the Alliaceae family. Two related vegetables, the elephant garlic and kurrat, are also variant subspecies of Allium ampeloprasum, although different in their uses as food. The edible part of the leek plant is a bundle of leaf sheaths which is sometimes called a stem or stalk.

Why use a leek you may ask, well because it has a subtle onion flavor, not strong at all. It's darn tasty to!!! You also might be thinking to yourself well what tips or tricks could you possibly have for a leek??? Well the tip is on how to to wash a leek. A leek is like an onion it has many layers, and the stem is open not as tight as a green onion. So dirt etc tends to get stuck in the stems! So how do we was a leek, well there are two ways:

1. To wash a whole Leek halve the leek length wise, splay open the layers, and run water over them until your sure that all the grit has been removed. See pretty straight forward and simple!

2. To wash sliced Leeks soak the sliced leeks in a bowl of cold water. Let them stand undisturbed for about ten minutes to let the grit fall to the bottom of the bowl. Scoop the leeks out gently, taking care not to stir up the grit. Pat the leeks dry.

Now that you have some clean leeks what can you do with them, well you can make Home At Least Leek Salad, the recipe is courtesy of the Food Network (one of my fave sites).

Dressing:

3 tablespoons red wine vinegar

2 to 3 sprigs thyme, stripped from stems

1 teaspoon stone-ground mustard

1 garlic clove, lightly crushed with the side of a knife blade and quartered

1 tablespoon honey

1 teaspoon salt

1/4 teaspoon ground black pepper

3/4 cup olive oil

Salad:

6 leeks, soaked in salt water to remove grit and thoroughly rinsed

2 tablespoons to 1/4 cup olive oil

6 ears fresh corn, boiled until tender and cooled to room temperature

1 cup sun-dried tomatoes, packed in oil or if dehydrated soaked in water to rehydrate

6 small sprigs parsley

Directions:

Through the feed opening of a running blender add, 1 at a time, vinegar, thyme, mustard, garlic, honey, salt, and ground black pepper. Leaving the blender running, slowly add the olive oil in a thin stream. Set aside until needed.

Slice the white and tender green parts of the leeks into 1/2-inch diagonals. Heat the olive oil over medium heat in a skillet and saute until tender. Set aside to cool to room temperature.

Slice the corn from the cobs and place in a bowl with the sauteed leeks. Cut the sun-dried tomatoes into 1/2-inch pieces and add to the bowl. Toss with enough of the dressing to coat. Do not feel compelled to use all of the dressing.

Serve garnished with parsley and additional dressing on the side.

There are over 700 hundred recipes for leeks on the Food Network site, so if you haven't ever cooked with leeks I suggest you give them a try and you might surprise yourself! They make a great soup!! Well thanks for joining me in this tips and tricks segment

Back during the days of the depression, my mother's family struggled for food. They managed to survive on inexpensive staples like pasta and bread and lived on the vegetables from their garden. Today, with so many people out of work the Food Banks of our nation can't keep up with the demand.

September is Hunger Action Month. Please take a moment to visit Feeding America (www.hungeractioncenter.org) to locate a food bank in your area. If you see a barrel collecting food at your local market, bank or service station, please consider purchasing an extra can of soup, or a box of pasta shells. It can go a long way to fill an empty stomach.

Chicken Salad

I love Chicken Salad. When I say that, I mean regular, boring chicken salad. No grapes or other things crowding out the basics. This recipe has a little flair, but not too much!

This recipe was found on Rara Bakes, and used with her permission!

I did not follow the quantities listed exactly. I am the only one in my family that will eat this, so I used less chicken, and much, much less pineapple! Make it to your own tastes!

6 chicken breasts

1 (20oz) can crushed pineapple

3/4 cup diced celery

1/3 cup chopped green onions

1/4 tsp salt

1/4 tsp pepper (I used more!)

1 cup mayonnaise

1 cup ranch dressing

3/4 cup slivered almonds

Bring a large pot of water to a boil. Add chicken breasts and cook for 30 minutes, or until done. Dice or shred chicken into small pieces.

Add drained pineapple, celery, onions, salt and pepper. Stir well.

Add mayonnaise and ranch dressing. Stir well.

Refrigerate for 8 hours or overnight. Stir in almonds just before serving.

Cilantro Lime chicken!

My last post was a great recipe for Cilantro Lime dressing. Today's recipe is for the great looking chicken in the photo! Paired with the dressing, this is a fabulous meal!

Lime and Cilantro Chicken
(Original Recipe found HERE, but changed to fit my families' tastes!)

Enough skinless, bonesless chicken breasts, cut into strips, to feed your family
Juice of 2 limes (can also use the zest for an extra kick)
2 TB Sugar
2 teas. dried Oregano
1/2 teas. Cayenne
1 teas. ground Cinnamon
2 teas. Cilantro
Vegetable Oil

Mix all the ingredients except for the chicken in a large bowl. Add chicken and set aside to marinate for 30 minutes.

Heat vegetable oil in a large frying pan. Add chicken and cook until done.

Here's the fun part! What to do with the chicken?
1. Salad! Add the chicken to a salad, and be sure to use Cilantro Lime Dressing over the entire thing!
2. Make burritos! We made ours with black beans, chicken, salsa, guacamole, sour cream, and cheese.
3. Add onions and peppers to the pan to make Fajita's!

What can you come up with? My husband took one bite of this chicken and said "WOW!" This is a keeper in our house for sure!

Recipe Series Part 11- Cilantro Lime Dressing

I found this amazing recipe on Rara Bakes.
It's a great food blog! Check it out today!

This dressing is similiar to the salad dressing at some mexican places like Cafe Rio and Bajio. Pour it over your salad, or any mexican dish.
Easy to make, fabulous to eat!

Creamy Lime Cilantro Dressing

1 packet Hidden Valley Buttermilk Ranch Dressing Mix
1 cup mayonnaise
1/2 cup buttermilk
1 lime
2 cloves garlic
1/2 cup roughly chopped cilantro
1/4 cup La Costena green salsa (I used another brand!)

Put dressing mix, mayonnaise, and buttermilk in the blender. Juice the lime into the blender. Peel the garlic cloves and then grate them using the small end of a cheese grater. Add to the blender. Add cilantro and green salsa.

Blend until everything is well-combined and then refrigerate for several hours before serving.

Easy, right? And best of all, it's sooo yummy!

Honey Chipotle BBQ Sauce

So today lets talk about chicken!! Yes, it is that blank canvas that is healthy and has the capacity to take on the flavor of any of the spices or marinades that you decide to throw at it. Now a days there are sooooooooooooo many labels being thrown at food that it is hard to keep them all straight, and exactly what do they really mean? Well we are going to find out together!!

Organic Chickens: Are fed a diet with no additives, not treated with antibiotics and raised under specific, humane conditions. Which are the requirements of the USDA.

Natural Chickens: Contain no artificial ingredients or added color. But unless the label reads "no antibiotics", there is no guarantee that there aren't any.

Free-Range Chickens: These are chickens that are allowed some room to roam outside the coop, but how much room isn't regulated. Not all free ranged chickens are raised on a natural diet.

Ok now we know what each means, but what does this really mean to you? It all comes down to what do you want to spend?!? Well I am a food snob and I don't buy my meat from the grocery store as the quality really does suck! What would I buy is the Natural Chicken from Aj's or Fresh and Easy. AJ's and Fresh and Easy are here in AZ I am not sure if they are all over the country or not. The quality of meat is very apparent. Once you see a high quality product and compare it to what is in your regular grocery store you well be AMAZED at the difference. I have seen the Natural chicken and the Organic. They are both high quality, but I would rather spend $7 bucks a pound than $11.50.

Ok, Ok, close your mouth now....I know $7 bucks a pounds is a lot too! Here is what I figure, food is like going to the doctor. You don't want to got to an eye surgeon that is offering a BOGO free special...hello they are your eyes!! Food is the same, it is fuel for your body and provides you with the protein, vitamins etc that you need to keep on living. So this is NOT the place to be cheap, especially when it comes to your meats, fish and veggies!

If it makes you feel better spend the cash on the good meats, fish and veggies and then buy off brand cereals, soda's etc! Ok so this is my opinion, you all have the right to disagree...the 1st amendment and all......but do me one favor take a trip to your local grocery store and then go to an Aj's or a Fresh and Easy. Look at the color, the texture of the meat. It is completely different! Why you ask, because what is in the grocery store is older! Umm not thanks I want something that hasn't sat at the place that they butchered them for 2 weeks and then shipped them out and then has sat at the grocery store for lord knows how long....ok ok...I am back on my soap box again!

Hopefully you have learned something useful!! Be safe, Be happy and go and LOOK at the difference in the meat........hehheheheh

Recipe Series Part 10- Crockpot Applesauce

I had some extra apples lying around, so I thought I would make applesauce. It was so easy to make! I think I'm going to make it from now on!

Here is the recipe I used. It turned out tasting just like the inside of an Apple Pie! If you don't want it to be as sugary, or taste like apple pie, you can use less spices!

6-8 Apples, peeled, sliced
1/2 cup water
3/4 cup packed brown sugar
1/2 to 1teas. Pumpkin Pie spice (or add cinnamon, nutmeg, cloves)

Place all ingredients in a crockpot. Cover and cook on low for 6 hrs, or on high for about 3 hrs. Mash all the apples, and Enjoy!

Where are you originally from?
I'm from Montreal, Quebec Canada, I speak English and French and both of my parents are immigrants from Ireland, Mom, County Mayo and Dad, Dublin. My Mother cooked every single night, used only pure and natural ingredients and everything she made was absolutely delicious so, I suspect she is the culprit behind my desire for great flavour and interest in cooking.

What's the inspiration behind your shop?
Good flavor doesn't have to come from a box. It's about going back to the very basics without all of the preservatives. Many people assume that they are eating healthy foods because they are preparing them from scratch but when they open up a packet or box of seasonings, it's not quite scratch anymore and just look at the list of ingredients! This isn't so natural anymore, is it.

How did you get started creating spice blends?
Upon arriving in Minnesota, from a Canadian's perspective, I thought I could introduce these folks to good food, easy and simple preperations using fresh (dried) herbs and blends. I spent my savings on a brick and mortar shop I called Oregano --I was a shopkeep and I absolutely loved it and my guests were very enthusiastic about my product line, home decor items and antiques but, just not enough to pay the rent and still keep my shelves stocked. I closed it in 2006 --it was a dark day : (

What is your favorite spice blend that you make, and what do you use it on?
I love all of my spice blends quite equally but being in love with the idea of other people loving my products, I have go with Ultimate Steak. I introduced this spice blend to my husband and now, he cannot live without it. It's on his Steak, it's in his burgers, it's even on his potatoes! Imagine the canister stuck inside the palm of his hand... He loves it, period and since it makes him so happy, it makes me happy. Boy, that was a corny answer.

What's a good spice or blend that is hot-spicy but mild enough for those who don't really love hot-spicy, like a good introductory spice to hot spices?
I love heat but too much is hard to handle! I make a lot of Stir Fries and sprinkle in a little hot curry powder, Tumeric or Garam Masal. Just a little goes a long way and it doesn't impart an Indian meal necessarily. It just provides another layer of flavour and heat. If you're not too keen on that, I love my Spicy Southwestern which I sprinkle all over a Chicken then bake it. It's similar to Old Bay but with a little zip or shall I say Ooh La La !

Cool off with Tea!

Now that the dog days of summer have arrived, I can only think of 2 things that make me happy in the hot days of summer...swimming with my kids and Iced Tea. Yep you heard me right, iced tea makes me happy!

The number one way to drink tea in the US is serving it iced. Cold bottled or fresh brewed or even sun tea, the US consumes more iced tea than any other country in the world. The rest of the world that drinks tea perfers it hot. Tea is also the single most consumed beverage in the world. Even water comes in second.

I am creating some great flavors to reflect the summer and the diferent places people come from or visit durring these hot, dry days. I also have a recipe to share for the perfect sun tea from either tea bags or loose leaf. With this recipe you can create your own perfect flavor.

Sun Tea Recipe

12 tea bags or 6 teaspoons of loose leaf tea

1 gallon of water (not cold or hot)

1 glass pitcher or sun tea jar

add all ingredients to pitcher. let brew in full sunlight for 4 hours or longer, depending how strong you like it. you may also like to add more or less tea. if using loose leaf tea, now is the time to strain off he leaves. Add ice and fresh fruit if you like. The fruit can be added at the beginning for a more infused flavor. serve with a fruit skewer or an umbrella just for fun!

Does a small dainty cookie appeal to you or does that monster chocolate chunk with M&M's make your mouth water up?

As an online business I find describing a cookie rather hard. Displaying a cookie so a person understands that it's bigger than a normal size cookie - okay whats normal size you ask? Recipes have certain standards.

Normal size cookies are to me about 1 1/2" to 3" inches. This would cover say a Swedish Tea Cake (round) to a chocolate chip cookie (flat) Standard drop by teaspoon on to cookie sheet.

Big size cookies to me go 2 1/2" to 4". Standard drop by tablespoon/two tablespoons onto cookie sheet.

Then monster size cookies anything over 4". Most of my monster cookies are about 5"-6" inches. Standard drop by ice cream scoop or 1/4 cup onto cookie sheet.

Then each size will also vary a tad in cooking time.

Bar cookies also have different sizes.

Just about any baked good can come in all shapes and sizes. Cakes, candy, pastries, bread now days can come in a single serving size to a size that 30 folks can enjoy at one time.

Personally; I love baking monster cookies. Two baking pans, 20 minutes of prep, just a little over 30 minutes of cooking time, and then I'm done for the day with lots of time left to read and explore more recipes.

Then dunk a cookie in milk as a special treat after dinner for several nights.

Strawberry Cheesecake Trifle

One of my favorite things about summer is fresh and sweet strawberries! We can find strawberries here in Arizona almost all year round. The only problem is they are not always sweet. Here is a delicious trifle recipe I enjoy making with fresh strawberries and cream cheese. Mmmm tasty!!

Strawberry Cheesecake Trifle

2 8oz packages of cream cheese softened

2 cups powdered sugar

1 8oz container of sour cream

½ tsp vanilla

1 cup cool whip

4 tablespoons sugar

1 angel food cake or pound cake cut into bite size pieces

2 quarts fresh strawberries thinly sliced

In a large bowl beat cream cheese and powdered sugar until light and fluffy; add sour cream, ½ tsp vanilla

Fold the cool whip into cream cheese mixture

Fold in cake pieces; set aside

Combine strawberries and sugar (stir until sugar is dissolved)

Layer in a large glass bowl or trifle dish (alternating with 1/4 of the strawberries 1/3 of the cake mixture finishing with strawberries)

Cover with plastic wrap and chill several hours

Enjoy!!

Today we are featuring Lucky Dog Treat Company!

Wonderful, handemade, PET TREATS!! That's right! I said PET treats!
We all take the time to pamper ourselves, but don't our pets deserve pampering too?

How did you get started making Pet Treats? Why not treats for humans?

I have always loved cooking and messing around in the kitchen. My grandmother had a huge part in that. Some of my favorite memories include helping her make rhubarb/apple cake and her soft molasses cookies. My passion for animals has been around for as long as I can remember. We always had a pet of some sort. We even had a skunk when I was little! *sans the stink bag. When the big hurrah came out in regards to the tainted pet foods, it really got me thinking. As my love for the whole foods/living lifestyle began to grow I thought, why are we treating our pets like second class citizens? They give us everything and ask for nothing in return. So I started researching pet diets needs and what they liked. Thus Lucky Dog was born!

Tell us about the market you sell at?

Currently I'm at three markets. But my favorite is the Glenside Farmers Market. It runs every Saturday May thru December. This market is my favorite because they support a "make it or grow it" philosophy. No junk or resellers here. There are several local farmers represented, some from Jersey and some from the Amish area. Jewelry makers, soy candles, baked goods, fresh honey and eggs to name a few. I have participated in this market for 7 years. One with this business, and 6 with my previous business which was handmade blankets. I love the vendors and the customers are fantastic. Die hard market fans, lol.They are loyal to the end, which really makes this market work for the community.

Where do you come up with your treat ideas?

My recipes come from a variety of sources, some from book, online, magazines. Then some I just have a "people" treat idea, and I tweak it. A lot of my ideas come from my customers at farmers markets. I had a ton of customers request blueberry, so that is where the blueberry one came from.

How many fur children do you have now and what type are they?

Fur kids, hehe. The count if up to four total. They are all rescues, I really don't think anything else is the way to go for me. Three cats, Dixie, aka Biggie Fats, Sadie, my sweet baby, and the kitten, Mimi, although she is now rivaling our oldest cat in the size category. Our newest addition is Maggie, well a year we have had her. She is part pitbull, part german shorthair, and is the fly in my salve most days..... A total nut case. She is the model you see in most of my etsy photos, and the ones that arent her are the dogs that the treat is named after.

How did you decide on your shop name?

I am unashamedly Irish, well a big part anyway, and in my mind the pets in resucues are lucky to get good homes! My business is largely Irish themed and I filed all of my legal paperwork on March 17, 2008 so that our anniversary would always be on St. Patty's Day!

What kind of music do you like?

My music tastes run all over the place. One day I may be cranking Metallica in the kitchen while I bake, going to sleep to Glenn Miller Orchestra, or you could see me driving down the road with the Grateful Dead or Jimmy Buffet blaring our the window. I love music and also play it. Learned piano when I was four and it rolled from there.

Can people eat your treats too?

What will happen if kids eat them? They will want more, lol If you look at the ingredient lists, there is not a single item in there that you couldn't eat, and probably do on a regular basis. Well, with the exception of maybe bone meal or liver powder. Ok, maybe the catnip. But other than that it's just regular cooking and baking ingredients, fruits and veggies!

This week we would like to feature Louise from Sweet Lollipop Shop!

The Sweet Lollipop specialize in custom hand poured lollipops and favors for all occasions, including crystal barley hard candy lollipops in hundreds of shapes and delicious flavors.

With over 300 different themed hard candy molds in stock and over 30 current flavors in stock, there is something for everyone and every theme imaginable and we specialize in customized orders, including weddings, birthdays, baby showers, Christmas, Easter and so much more.
Can you explain exactly WHAT is Barley Candy? How did you get started making it?

I stumbled into making barley pops almost by accident after a friend suggested I begin selling the candy I made for family and friends parties as gifts because she thought people would go crazy for it. I mostly made chocolate but was experimenting with other styles of candy including gummies and hard candy and developed a passion over time for making traditional style barley candy because of their natural ingredients, taste and how pretty they looked.

Barley candy is a traditional British boiled sweet style candy that became very popular in the early 1900's (although has been around much longer) and was used to create 3D toy candies and was also given to relieve sore throats and upset stomachs. Whereas it used to be made using cane sugar and cream of tartar, the cream of tartar is now not used and instead corn syrup is used which helps to stabilize the candy mixture and also extends it's shelf life.

My own recipe is a tweaked and modified family recipe from back home in the UK and I do not use HFCS as I wanted to keep the ingredients as natural and as healthy as possible and also keep the sweetness of the candy as natural and subtle as possible, which is how barley candy is supposed to taste.

Tell us how long you have been in New Hampshire and what brought you there from the UK? And...would love to know about your family!
I have lived in NH now for almost 4 years, but I've been away from the UK now for about 12 years. My husband is what brought me to the US, he's a NH native, I have 4 children, ages 19, 18, 16, and 9.
What do you miss most about the UK? what do you like the best about New Hampshire?

I miss my dad the most, although we've never been really close he's always been there if I've needed him. I also miss where I used to live in Paignton, Devon, minutes walk from the beach and the local zoo where I volunteered and dressed in a funny lion costume to entertain children! I also definitely miss the food, cheese and onion pies, chips, mushy peas and gravy used to be one of my favorite treats.

My favorite thing about NH is definitely how beautiful and peaceful it is, I can drive in any direction and be surrounded by trees and mountains and natural beauty and I can look up at the sky and see the stars on a clear night without the glare of city lights spoiling the view.

Recipe Series! Bread Machine Challah Bread

Bread Machine Challah Bread

Italian Spiced Challah Bread!

I wanted to make bread in my bread machine, so I searched for a good recipe. This one is A-mazing! Very easy to make, and you can turn it into so many different flavors! Here we go!

Ingredients:
3/4 cup Milk
3 Eggs
3 TB margarine/butter
3 cups bread flour
1/4 cup sugar
1 1/2 teas. salt
1 1/2 teas. active dry yeast

1. Add ingredients to the pan of the bread machine in the order suggested by the manufacturer. (Usually wet ingredients first, and then dry)

Then do EITHER of these options:
A. Select Basic Bread and Light Crust settings. Start. Bread will be cooked completely!
B.(I did it this way) Select DOUGH settings and press Start.

After the machine is done, take the dough out, and place it on a very lightly floured board, punch the dough down, and let rest for 5 minutes.
Divide the dough in half. Then divide into 3 equal pieces, roll into ropes about 12 to 14 inches, and braid into a loaf. Do the same with the remaining other half. Gently put the loaves on a greased cookie sheet, mist with water, cover loosely with plastic wrap, and let rise for 1 to 1 1/2 hours in a warm, draft free place, until double in size.
Preheat oven to 350 degrees F (175 degrees C). In a small bowl, beat together 1 egg and 1 tablespoon water.
Brush risen loaves with egg mixture. Sprinkle with sugar. (optional)
Bake in preheated oven for 10 minutes. Then, cover loosely with foil, and bake for another 10-15 minutes. This prevents the crust from browning too soon.

Then, check out all the variations I have thought of... and let me know if you come up with more!
* Add 1-2TB Italian herbs to dough. Sprinkle garlic powder on top of loaf after spreading egg/water mixture. This tastes BETTER than Italian Bakery Bread! (The top picture is of the Italian bread!)

* Add Cinnamon, Sugar, Nutmeg to dough. After cooking, drizzle cinnamon roll frosting on top!

*At your machine's add-in cycle, add shredded cheese and spices.
